Freddie Bitsoie is a proud Navajo and an award-winning chef. He is the executive chef of Mitsitam Native Foods Cafe, located inside Washington, D. C. ' s Smithsonian National Museum of the American Indian. Bitsoie was previously the executive chef of Fire Rock Casino and is the winner of the Smithsonian' s Native Chef Competition. He has contributed to a number of Native American cookbooks, including America: The Cookbook (Phaidon, 2017) and James Beard Award-winner Sioux Chef' s Indigenous Kitchen (University of Minnesota Press, 2017). He lives in Washington, D. C. James O. Fraioli is a James Beard Award-winning author with nearly 40 books to his credit. He lives in Seattle, Washington.

Locally sourced in NZ - stock comes from a NZ supplier with an approximate delivery of 7-15 business days.

International Imports - stock is imported into NZ, depending on air or sea shipping option from the international supplier stock can take 10-30 working days to arrive into NZ.

Delivery Packaging - we ship all items in cardboard sleeves or by box with either packing paper or corn starch chips. (We avoid using plastics bubble bags)
