In Chaat, Maneet Chauhan explores India' s most iconic, delicious, and fun-to-eat foods coming from and inspired by her discoveries during an epic cross-country railway journey that brought her to local markets, street vendors, and the homes of family and friends. From simple roasted sweet potatoes with star fruit, lemon, and spices to a fragrant layered chicken biryani rice casserole, and the flakiest onion and egg stuffed flatbreads, the recipes are varied, colorful, and expressive. Maneet weaves in personal stories and remembrances as well as historical and cultural notes as she winds her way from North to South and East to West, sharing recipes like Goan Fried Shrimp Turnovers, Chicken Momo Dumplings from Guwahati in Assam, Hyderabad' s Spicy Pineapple Chaat, and Warm-Spiced Carrot and Semolina Pudding from Amristar. Chaat is a celebration of the diversity of India' s food and people.
"It' s hard to imagine not loving chaat: Few snacks manage to be lusciously creamy and brightly acidic, crackly, saucy, and chewy all at once. Yet somehow, these varied Indian snacks often do it all. Maneet Chauhan, who grew up in Ranchi in East India but is now based in Nashville, where she runs three restaurants, and remembers the chaat and snacks of her childhood train trips across India in this book. "--Epicurious"Chaat is a delicious journey through India' s rich street food culture. "--Jet Tila"Maneet' s new book, Chaat, is gorgeous, vibrant, heartfelt, educational, and fun. Her passion for food and cooking has always been contagious and it' s on full display in these pages. Maneet has penned a love letter to the best of Indian food, found not in big hotels or five-star restaurants, but in the back alleys, train stations, and winding streets where real Indian families come together to enjoy a meal of street food. It is the food of our shared childhoods, it is the joy of the tasty discovery that comes from travel. Every page is a feast for the eyes and the palate. It will make you hungry for more.
