A visually stunning cookbook of unexpected recipes inspired by the ever-changing West Coast landscape, from Vancouver's award-winning restaurant, Burdock & Co. "A tiny slice" is how Burdock & Co has been described--a tiny slice of a restaurant that takes inspiration from its surrounding West Coast world like no other. From the coastlines and islands to the valleys, forests, and farms, Chef Andrea Carlson harnesses the essence and power of nature to create dishes guided by place, by moment. The layered colours, aromas, textures, and flavours of her cooking shine luminously from the pages of this, her first cookbook. With a literary and conversational narrative that weaves through the recipes, Burdock & Co is a cookbook to read as well as to inspire. Andrea guides us through the delicious potential of the natural world, and profiles of the farmers and foragers within the Burdock & Co community. From exploring oceans, farms and gardens, to foraging and fermenting, to unlocking the secrets of botanicals, discover unexpected dishes, many with vegetarian, vegan, and gluten-free options, that speak to your experimental side. Transform your kitchen with the famous Buttermilk Fried Chicken & Pickles, and the Padr n Peppers topped with Almond Garlic Oil and Almond "Parmesan," pair it with a homemade Sunchoke Beer, and end with a Spice Cake Carrot Sorbet and Carrot Candy for dessert. The delicate complexity of each dish, whether it spotlights the offcuts of a fish or celebrates freshly picked rosehips, is mirrored in the gorgeous photography featured in this carefully designed cookbook. This unique and playful book evokes a natural beauty, and imbues the distinctive Burdock & Co dining experience.
