After graduating from Hattori Nutrition College in Tokyo, Choi Heejae completed her studies in traditional food life culture at Sookmyung Women' s University in Seoul. She also completed her studies in traditional food and drink culture at the Research Institute of Korean Royal Cuisine in Seoul. Besides running her own restaurant in Seoul, she has consulted with individual restaurants and helps to develop menus. She currently operates one day cooking classes in Oksu, Seoul in both Korean and Japanese, as well as conducting cooking classes at the Hyundai Seoul department store.
